100% hand-picked, organic & dry-farmed Assyrtiko grapes from our Mavrokopa, Dessi (Waterways) & Palia Vouna (Old
Mountain) vineyards.

The crops were low, but the quality was
excellent, and this allowed for a riper expression of this fantastic variety, harvested in mid-September.

Altitude: 180 -220m above sea level at the foothills of Mt Pangaion.

Soil type: Loose-red/brown-silty topsoil 60cm. Below that thick/dense white clay.

With this wine, it's about retaining purity and minerality whilst developing texture.
 

The grapes are only very gently pressed so to keep grape solids to a minimum.

One thirf of the volume is wild fermented in Acacia barrels and the rest is cold fermented in stainless steel.

The wine is then left on its yeast lees for 7 months to develop texture.

Notes of fresh oyster shell and rock melon on the nose give way to ripe lemon and brioche flavours on the palate
