Dry Farmed & Low Intervention White Wine
Harvest & Vineyards
100% hand-picked, organic & dry-farmed Malvasia Aromatica 70%, Viognier 25% & Sauvignon Blanc 5% grapes from our
Mavrokopa vineyard.
These vines were only 4 years old; the
grapes were harvested all together on the same day in the last week of August.
The quality of the fruit produced by such young vines was exceptional!
Altitude: 220m above sea level at the foothills of Mt Pangaion.
Soil type: Loose-red/brown-silty topsoil 60cm. Below that thick/dense white clay.
Thoughts
Ripe pear, rose petals and subtle spices on the nose, pomegranate, watermelon & vanilla on the palate. Subtle yet powerful, not your average Rosé!

Vinification
Whole bunch pressed to Acacia barrels, then left to macerate inside the press.
The balance then pressed to stainless steel.
Wild fermentation from yeast in the vineyard, partial malolactic fermentation and then 7 months of gentle lees stirring.
Very minimal use of SO2 following fermentation.
The wine is left un-sulfured for 8 months to gain pallet weight and integration.
