100% hand-picked, organic & dry-farmed Koiniariko grapes from our Dessi (Water Ways) vineyard.
The vineyard is 22 years old. This variety ripens very slowly, and the grapes were
harvested in the 1st week of October.
Altitude: 180m above sea level at the foothills of Mt Pangaion.
Soil type: Loose-red/brown-silty topsoil 60cm. Below that thick/dense white clay.

Intriguing notes of sweet spices, cracked pepper and wild strawberries dominate the nose, whilst elegant tannins and black cherries make for a medium-bodied red wine showcasing
"terroir".

Vinification
Destemmed into open-top-style vat +25% whole bunch component.
We cold soak the grapes for 3-4 days before we encourage spontaneous fermentation to take place.
The fermenting grape must is only gently plunged to extract colour and tannins, and the temperature kept below 25 deg C.
Maturation in new and old French oak for 10 months. Unfined & unfiltered.
