100% hand-picked, organic & dry-farmed Agiorgitiko & Syrah grapes from the Pefka vineyard.
These vines are 10 years old; the grapes were hand-harvested in the last week of August.
The quality of the fruit produced by established vines was exceptional!
Altitude: 180m above sea level at the
foothills of Mt Pangaion.
Soil type: Limestone/clay.

Vinification
The grapes were crushed and destemmed, then left to soak in the press for 2-3 hours to maximise the extraction of flavour
and aromatic compounds from the skins.
The juice is fermented in a stainless-steel tank at low temperatures to maximise fruity
characters.
Once the fermentation is almost completed and has reached a secret level of residual sugars, the ‘almost dry’ wine is bottled under a ‘crown cap seal’ and is left to finish fermentation in bottle – this creates those lovely bubbles!
