Dry Farmed White Wine

Harvest & Vineyards

100% hand-picked, organic & dry-farmed Vidiano grapes from our Mavrokopa vineyard.

The vineyard is only 5 years old, so we
keep crops low to reach optimal ripeness. Harvested at the beginning of September, we want to retain acidity and keep alcohol levels low to encourage malolactic fermentation later on.

 

Altitude: 220m above sea level at the foothills of Mt Pangaion.
 

Soil type: Loose-red/brown-silty topsoil 60cm. Below that thick/dense white clay.

Thoughts

Yellow apple, orange peel, vanilla & subtle hints of botanicals on the nose give way to apricot, citrus, wet stone & thyme on the palate.

Vinification

With this wine, it's about texture, fruit, complexity and intrigue!
 

The grapes are only very gently pressed so to keep grape solids to a minimum.

Wild fermented in used oak barriques and tank, we also encourage malolactic fermentation to soften the palate.

The wine is left unsulfured on its yeast lees for 7 months to unlock aromas and gain texture, we then blend the barriques with the tank for complexity
